my go-to juice and a winner!

Happy Tuesday. It’s practically Wednesday since it’s a short week, what a great feeling right?

I wanted to share with you a great juice recipe. It’s my go-to juice recipe. I know the ingredients well, so if I ever have a craving for a juice that I know won’t taste like dirt, this is it.

Allison’s Go-To Juice

3 carrots

3 stalks celery

3 beets

1 green apple

chunk of ginger

makes 2 cups.

Best if served chilled.

procrastinating and burgers

One more week until Christmas! And I have yet to do all my shopping… procrastination much?

Instead of christmas shopping, I made another vegan meal!

Tonight’s supper. Recipe adapted from getvegucated

Black Bean & Quinoa Burger

1 can black beans, rinsed

2 cup quinoa, cooked (original recipe called for 1 cup)

1 red pepper, cut

1 clove garlic, chopped

lemon juice

Instructions

-saute garlic and red pepper

-add lemon, black beans, garlic and red pepper to food processor; blend

-add quinoa; blend a little more

-form into patty

Verdict? It was okay. Slightly mushy, could have used less beans to make it more formable. We had to plop it on the pan to fry it a little on each side. Flavour wise it was okay, needed something more to it though, I think next time I will add salt and possibly onion powder.

Oh hello, remember me? yaa.. things have been a little hectic here lately! And now with Christmas coming up in a week, oy. I will do my best to stick around this time.

So on Sunday night, we watched a documentary called Vegucated on Netflix (canada, not sure if U.S has it or not). Vegucated is a film that tells the story of 3 people who, for 6 weeks, adopt a vegan diet and a whole new way of thinking about food. [source]

I cried, I was pissed, disturbed, I felt sick. I knew I had to change how I was living and how I was eating. If you watch this, watch with caution but it is very eye opening and I do recommend seeing it.

I’ve never been vegan, and I never really thought about going vegan before, heck I was eating paleo for awhile! Although I did dabble a little bit into vegetarianism. But this film really opened up my eyes. I won’t give any spoilers or details because I feel like you should watch it for yourself.

So the point to all this, well I’m making an active change in my life. I will be introducing many more meat-free meals to my life.

Queue Vegan meal # 1: Quinoa with kale and cranberries

I got the recipe off of this website, vegweb.com

We doubled the recipe for two people.

2/3 cup quinoa, rinsed
1 1/3 cup water
2 handfuls kale, rinsed and ripped up into small pieces
2/3 cup dried cranberries
2 tablespoon olive oil

We didn’t have orange juice, so that was omitted.

I added a little cinnamon and salt. I must say I was impressed! The kale was nice and mild, and the cranberries gave it a great flavour. I’m sure we will be trying this recipe again.

In other news, I registered for my second Half Marathon in May 2013! So pumped. I was the second person to register for the whole race, my new friend Andrea was the 4th! Like she said, we are keeners! haha
